Snow Day Bonus: The BEST Chocolate Chip Cookies

Chicago is digging out from Snowpocalypse 2011. And to me, snow days mean baking, so I dug out a favorite recipe for chocolate chip cookies. I hereby declare them the best ever. (I think it’s the oatmeal.) Give it a try and see if you don’t agree:

Chocolate Chip Cookies (can be doubled)

1 cup butter

1 cup sugar

1 cup brown sugar

2 eggs

2 cups flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

2 cups blended oatmeal

1 tsp vanilla

12 oz chocolate chips*

1.  Measure oatmeal, and blend in a blender to a fine powder.

2.  Cream the butter and both sugars. Add eggs and vanilla. Mix together with oatmeal. Combine flour, salt, baking powder, and baking soda. Add chocolate chips.

3. Roll into balls (I used an ice cream scoop) and place two inches apart on a cookie sheet.

4.  Bake at 375 F for 9-10 minutes.

Notes: I didn’t have 12 oz of chips (more like 5) so I combined that with guittard discs from my pantry, and a few handfuls of m&m’s. Completely unscientifically measured. I also baked for longer than the time specified, but I suspect my oven needs to be re-calibrated.

    Many moons ago you posted a link to Camping Cookies. I have made those multiple times – and always for our fall Yosemite trip. Thanks for sharing that recipe. It has definitely made me famous!
